The name of the font that is used in the lettering for the Encanto movie logo is a typeface by the name of Madrigal. It was created and produced by a Columbian font author by the name of Walter who owns and operates the NubeFonts typeface foundry.
The Madrigal font includes all of the lovely curls and swirls which are present in the original Encanto movie poster logo. Please note though, that it only includes Uppercase characters in the font map which is in keeping with how the Disney Encanto movie title lettering is styled.

The Disney Encanto font is notable for its thin lines and curvy edges. Strikingly, letters like I, L, and U possess curved and sharp-edged terminals. Its font stems also are a mixture of bold and thin. Supported by international characters, the font’s design aptly matches the film’s fantasy-style theme.
